Quando le prugne saranno marinate, preparate la farcitura per la lonza.<br />Utilizzando un coltello o un affilacoltelli create un foro al centro della lonza, per tutta la sua lunghezza. Dovrà avere un diametro simile a quello delle prugne. Procedete quindi a riempire il foro con le prugne marinate.<br />Tenete da parte il Marsala e le prugne rimaste per deglassare alla fine il liquido di cottura dell’arrosto.<br /> Potete quindi legare l’arrosto con lo spago da cucina, per mantenerlo in forma durante la cottura.<br />Insaporite l’arrosto a piacere con sale e pepe, avendo cura di distribuirli in modo uniforme. Quando sarà calda, ponetevi delicatamente l’arrosto e fatelo rosolare in modo uniforme su ogni lato. Aggiungete il rosmarino, la salvia e lo spicchio d’aglio (senza spelarlo, in modo che non bruci).<br />Ponete l’arrosto in forno a 180° C per circa mezz’ora.<br />Quando l’arrosto è pronto, toglietelo dalla pentola (mantenendolo al caldo) e preparate la salsa.<br />Unite il Marsala  al fondo di cottura dell’arrosto e lasciate evaporare a fuoco vivo. Aggiungete un po’ di acqua e fate bollire la salsa per un paio di minuti. Passatela quindi in un altro recipiente attraverso un colino, e aggiungetevi le prugne rimaste. <p>Tagliate l’arrosto a fette e ponetelo nel piatto da portata, cospargendolo con la salsa alle prugne ristretta.<br /><strong>Abbinamento Vino:</strong><br />Con questa ricetta abbiamo provato ad abbinare il nostro vino di punta <a href="https://rigolivini.com/de/archivio-prodotti-agricoli/testalto-docg-val-cornia/" target="_blank">Testalto 2012</a> DOCG,  è un Sangiovese 75% con Merlot e Cabernet nella restante parte. E&#8216; un vino che ha una maturazione in barriques per 18 mesi che gli conferisce profumi speziati.<br />Ottimo per serate importanti!</p>

<p style="text-align: center;"><strong>Storie nel piatto<br /></strong></p>
<p>La prugna, frutto estivo zuccherino e ricco di potassio e calcio, è originaria dell’Asia caucasica ed è probabilmente approdata in Grecia (e da lì si è diffusa in tutta Europa) attraverso le spedizioni di Alessandro Magno. Nei primi secoli d.C. il mondo greco e quello latino conoscevano questo frutto: ne parlano infatti Dioscoride, Plinio e Columella. Sembra che le prugne siano invece approdate in America solo nella seconda metà dell’Ottocento, a seguito del cercatore d’oro francese Louis Pellier. A causa dello scarso successo avuto nelle miniere d’oro, Pellier iniziò a coltivare le prime piante di prugna, importate dalla Francia.<br />Le varietà di prugne sono davvero tante, con colori che vanno dal giallo dorato al viola scuro. Ogni varietà ha il suo nome, spesso curioso: dalla rossa Coscia di Monaca, alla gialla Boccon del Re, alla arancio-violacea Favorita del Sultano.<br />Anche se nel parlare comune si tende a confondere la prugna con la susina, i due frutti appartengono a specie diverse: <em>Prunus domestica </em>(prugna) e <em>Prunus salicina</em> (susina).</p>

A loro si aggiungono i sommelier (22,3%) e gli enotecari (9,5%). Figure che il Salone internazionale dei vini e dei distillati ha sempre valorizzato, proponendosi come luogo dove scoprire nuove cantine e nuove etichette, migliorare le proprie competenze e diversificare l’offerta per il consumo fuori casa. Un impegno che Vinitaly 2017 (9 al 12 aprile — www.vinitalycom) riconferma sia nel numero di espositori italiani ed esteri, sia con le degustazioni organizzate dalla Vinitaly International Academy- VIA e in collaborazione con le più importanti testate giornalistiche internazionali nell‘ormai consolidato format del Tasting ex&#8230;press, sia rafforzando il legame tra vino e alta cucina nel Ristorante d’autore e nel Self—service d’autore.<br />La cultura del prodotto e la presentazione d’insieme della tradizione enogastronomica italiana è un punto di forza di Vinitaly anche rispetto ai buyer esteri. Il salone, per tradizione e con un grande impegno per elevare il livello di professionalità e l’internazionalità dei visitatori, e fortemente orientato al business. Per questo ogni anno aumentano gli investimenti per l’incoming di delegazioni di operatori dai più interessanti Paesi di consumo. Per entrare in contatto con le aziende maggiormente export-orientend, anche di medio-piccole dimensioni, vengono organizzati matching b2b nell’ambito dell’iniziativa Taste &amp; Buy.</p>
<p>Tra le novità di quest’anno, la rivisitazione del layout e l&#8217;ampliamento di parte degli spazi espositivi, obiettivi che rientrano nel programma di rafforzamento del Salone lanciati con l’edizione del cinquantesimo, e che danno la possibilità ad alcuni espositori già presenti da anni di trovare la loro collocazione definitiva nel padiglione dell&#8217;area geografica di riferimento, oltre che di accogliere nuove importanti partecipazioni.</p>
<p>È il caso delle cantine del Piemonte, che da quest’anno hanno occupano anche tutto lo spazio ottenuto dall’ampliamento del padiglione 10. Lo spostamento per congruità territoriale del Molise nel padiglione 11 con le cantine di Puglia e Basilicata, dà invece modo alla Sardegna di riprogettare la propria presenza istituzionale nel padiglione 8, a fianco dei saloni speciali Vinitalybio e Vivit—Vigne Vignaioli Terroir e della collettiva Fivi (Federazione italiana vignaioli indipendenti) e di una buona parte delle cantine venete.</p>
<p>Infine, la realizzazione di un nuovo grande spazio espositivo che sostituisce le due tensostrutture separate allestite fino all&#8217;edizione 2016, enfatizza la presenza degli espositori esteri di Vininternational grazie alla contiguità con le cantine della Toscana.<br /> Novità anche da parte degli espositori, con sempre più aziende che escono dalle collettive per investire direttamente sulla propria immagine. Il loro numero in crescita, come pure gli espositori crescita, come pure gli espositori esteri presenti nei saloni speciali Vivit e Vinitalybio rappresentano un’opportunità di conoscere nuovi vini e di entrare in contatto diretto con aziende provenienti dai più importanti Paesi produttori.<br />Ai professionisti della ristorazione e della vendita per il consumo fuori casa, spunti di interesse vengono anche da Sol&amp;Agrifood (www. agrifood.com) ed Enolitech (www.enolitech.it), che si svolgono in contemporanea con Vinitaly.<br />Novità del Salone Internazionale dell&#8217;Agroalimentare di Qualità è il nuovo spazio “Biodiversità e Territori”, un’area tematica interattiva per valorizzare quei prodotti la cui tipicità è espressione della biodiversità del luogo di origine. Un‘iniziativa che si aggiunge ai tanti appuntamenti di degustazione con protagonisti salumi, formaggi, birre, oli extravergini di oliva e altri prodotti dell&#8217;eccellenza agroalimentare.<br />A Enolitech, oltre alle tecnologie di produzione, in esposizione anche una vasta gamma di complementi di arredo per la conservazione dei vini e di oggettistica per la mescita e il loro consumo. E se gli affari si fanno in fiera, per i wine lover Vinitaly organizza il suo fuori salone nel centro storica di Verona, tra arte, storia e cultura.</p>
